Instant Soft Serve Ice Cream
I love how easy this Instant Soft Serve Ice Cream is to make as a treat on a hot summer day. All you need is a high-speed blender or a food processor – no need for an ice cream maker! I love to top this with fresh berries and drizzle it with my Magic Shell Chocolate Sauce.
Ingredients
fruit or berries of choice (strawberries, blueberries, cherries, blackberries, pineapple, etc.) frozen | 2 cups | |
coconut milk | ½ cup |
Directions:
- Add frozen berries/fruit to your blender or food processor. I highly recommend using a high-speed blender for this recipe, especially if using frozen pineapple.
- Slowly add up to ½ cup coconut milk, then blend. The less liquid you add, the thicker the ice cream will be. But it’s the liquid that helps it to blend better.
- You may need to stop and start the blender a few times to push the “ice cream” down from the sides. Try not to over blend, as you want to keep this cool, thick & creamy.
- Top with your dietary approved nuts, fresh berries, or chocolate chips.
- Spoon Instant Soft Serve Ice Cream into a dish and enjoy!
