Creamy Chocolate and Vanilla Mousse (Fig Pudding)
I love this rich and Creamy Chocolate and Vanilla “fig pudding”. It makes a wonderful afternoon snack or rich dessert. It’s magical how the figs whip up such a wonderful mousse. This pudding is also great as it is made with no added sugars or sweeteners, and it is nut-free! For best results use a high-speed blender or food processor. Or you can try soaking the dried chopped figs in warm water for 30 minutes before blending if you’re not using a high-speed blender. This will likely save your blender although it may not have enough power to pulverize the fig seeds. I love to top these with freeze-dried cherries.
Ingredients
golden figs, dried, chopped | ½ cup | |
coconut milk, full fat, (*see recipe notes) | 2 cups | |
vanilla extract | 2 tsp | |
cacao powder | 2 tbsp | |
sea salt | 1 tiny pinch |
Optional Garnishes
toasted coconut, dried cherries, chopped fig |
Directions:
- Chop figs into very small pieces. Then measure out ½ cup.
- Add chopped figs, 1 cup coconut milk, vanilla, and sea salt, into a high-speed blender or food processor, and blend until creamy.
- Slowly, add an additional 1 cup coconut milk, until you have the right pudding consistency.
- If you are going to make ½ of these vanilla and ½ chocolate, after blending, spoon out the amount you want to reserve for vanilla pudding. Then, add in some cacao and blend again.
- Ready to eat right away, or you can chill in the fridge (covered) for a few days.
Recipe Notes:
If you don’t tolerate coconut milk, you can any “milk” of your choosing. I highly suggest using one with a high-fat content for a rich creamy pudding (check out my Homemade Almond Milk recipe as an option). Also, if not using coconut milk, you may only need 1 1/2 cups of “milk” instead of the full 2 cups. You can also add in a big spoonful of almond butter to help make it a bit richer.
