Homemade Almond Milk

Homemade Almond Milk

This naturally creamy and sweet homemade almond milk is a wonderful alternative to cow’s milk. I love using this milk in my granola or for homemade hot chocolate. And, while we’re on the topic of chocolate, I love dipping chocolate chip cookies in this almond milk with my kids! Please note that the additional soaking time of the almonds is not included in the listed prep time. For another alternative to cow’s milk, check out my Homemade Coconut Milk recipe.

Ingredients

raw almonds 2 cups
vanilla bean 1
water 4 cups

Directions:

  1. Fill a large bowl with water and soak the almonds and vanilla bean (optional) overnight.
  2. Drain and rinse the almonds and optional vanilla bean. Discard soaking water.
  3. In a high-powered blender, puree the almonds, vanilla bean (optional), and 4 cups of water until smooth.
  4. Strain the mixture. A nut milk bag is ideal for straining but you can also use cheesecloth. You can either discard the pulp or keep it for my nut-pulp granola recipe.
  5. Store this homemade almond milk in a glass jar in the refrigerator for up to 3 days.

Dietary Notes:

Starch-Free: If you want truly starch-free almond milk you’ll want to remove the skins. The easiest way to do so is to boil the raw almonds in water for about 5 minutes. Drain. When the almonds have cooled enough it’ll be easy to slip off their skin.
