Creamy Vegan Alfredo Sauce

This sauce always wins the compliments of those not accustomed to “raw food” as it has that true taste of creamy Alfredo sauce so many love. Make sure to use macadamia nuts for this if you’re looking to go starch-free as cashews are starchy.

Ingredients

cashews or macadamia nuts (see recipe notes) 1 cup
lemon juice 1 tbsp
garlic 1 clove
thyme, fresh ½ tsp
water ½ cup (more as needed)
sea salt ½ tsp
black pepper (*see recipe notes for starch-free version) ½ tsp

Directions:

  1. Blend ingredients together in a high-speed blender.
  2. Serve over zucchini or spaghetti squash noodles.
  3. This sauce is best served at room temp or slightly chilled.
  4. Refrigerate leftovers.

Recipe Notes:

Starch-Free option: use macadamia nuts instead of cashews. Also, omit black pepper
Low-Carb option: use macadamia nuts
