Real Fruit Popsicles
These popsicles are the perfect starch-free summer treat! They are also the best way to use up any extra fresh fruits you might have lying around. Rather than let excess fresh fruit go to waste, you can simply freeze it up into a real-fruit popsicle to enjoy later. If you want to keep it super simple you can omit the fresh fruit and just add in your favorite fruit juice or tea. I like to mix and match the fruits to create popsicles that feature every color of the rainbow. This recipe makes 10-3oz popsicles.
Ingredients
fresh fruit of choice: strawberries, kiwi, pineapple, grapes, cantaloupe, blueberries, raspberries, or blackberries | 2½ cups | |
fruit juice of choice: grape, apple, pineapple, or hibiscus tea | 2 cups |
Directions:
- Chop and slice fresh fruits of your choice, if using berries leave them whole.
- Gently pack fresh fruit into each popsicle mold.
- Pour fruit juice over the fresh fruit to fill in the gaps. Leave ¼ inch empty at the top of each popsicle mold as liquid expands when freezing.
- Add in popsicle sticks and freeze for about 6 hours or until firm.
- To release popsicles from the mold after they are fully frozen, carefully run the base of the popsicle mold under lukewarm tap water, until you can easily slide the popsicles out from the mold.
