Gut Healing Gummies – Pomegranate Lime
These gummies are super easy and quick to make. Before I had gummy molds I just poured the liquid into a baking pan and cut it into little squares after it had set. I must say though, the molds have made it super fun for the kiddos. I pour the liquid into dollar-store squeeze bottles (which, by the way, are pretty lousy quality and I don’t recommend them) and let my kids fill the molds. Their favorite molds are the Lego men, but we also have Lego blocks, gummy bears, and hearts. Super fun and rich in antioxidants and vitamin C!
Ingredients
pomegranate juice (or juice of choice) | 1 cup | |
gelatin, grass-fed | 3 tbsp | |
lime juice, optional* | 2 tbsp | |
honey, optional* | 2 tbsp |
Directions:
- If using silicone molds, pull them out and place them on a flat cookie sheet. You can also skip the molds and simply use a baking pan (8×8) and cut the gummies after they have set.
- In a small saucepan, combine the pomegranate juice and honey. Whisk together over low heat.
- Whisk in the gelatin one tablespoon at a time, making sure each tablespoon is fully dissolved in the liquid before adding the next.
- Heat the mixture until steaming hot but not boiling. Remove from heat.
- Stir in the lime juice, if using.
- Use a dropper or a squeeze bottle (*see notes) to fill the molds. Alternatively, pour the entirety of the hot liquid into a baking pan.
- Place molds or baking pan into the refrigerator to set.
- Once the gummies have set (about 30 minutes, depending on the size of the mold), remove them from the molds and store them in an airtight container in the refrigerator for up to a week.
Recipe Notes:
- You can substitute any other flavor of 100% juice.
- Be sure to use gelatin in this recipe, not collagen peptides.
- If you choose to eliminate the honey and/or lime juice you can slightly reduce the amount of gelatin powder used as well.
- You can find squeeze bottles at the dollar store as I did, but they aren’t quality (surprise). When looking to purchase, look for something like this squeeze bottle.
