Savory Flax Waffles
I love serving these waffles with yogurt and a side salad. I have found that this recipe works really well with goat cheddar, but if you can’t tolerate dairy you can omit the cheese altogether.
Ingredients
flax seeds, ground | ½ cup | |
eggs | 2 | |
avocado oil (or other light oil) | 1 tbsp | |
almond milk (or other non-dairy milk) | 3 tbsp | |
baking soda | ½ tsp | |
lemon juice | 1 tsp | |
sweetener of choice: honey or maple syrup (optional) | 1 tbsp | |
fresh herbs: any mix of chives, basil, mint fresh* | ¼ cup | |
olive oil | for cooking | |
cheese, grated | ½ cup |
Directions:
- Turn on the waffle maker.
- Measure ½ cup of ground flax seed meal. If starting with whole flax seeds, grind them in a coffee grinder first, then measure ½ cup.
- Mix all ingredients together in a bowl. Add in the grated cheese (*see recipe notes) and chopped herbs last.
- Grease waffle maker. Spoon batter into the waffle maker, or pancake batter onto the frying pan. This recipe will make approximately 6 small waffles. If the batter seems “thick” it should spread out fine when waffles cook.
- Cook waffles according to waffle iron instructions.
- Serve savory waffles with yogurt and a side salad.
Recipes Notes:
- If you don’t tolerate dairy or if you want a paleo version of these: omit the cheese.
- If using dried herbs start with 1 to 2 teaspoons each.
