Pita Tortilla Naan Bread

This Pita Tortilla Naan Bread is a real treat after going so long without a chewy, filling, and satisfying bread-like wrap. One word of caution, not everyone on the starch-free diet responds well to psyllium fiber. It is starch-free, but it is seriously loaded with fiber and expands during digestion. Be sure to drink extra water when enjoying this Pita Tortilla Naan Bread, so they can move more easily through the digestive tract.

Ingredients

coconut flour ½ cup
psyllium husk powder 1½ tbsp
sea salt 2 pinches
water, hot 1 cup

Optional Ingredients:

honey 2 tsp
garlic powder ½ tsp
cumin, ground ¼ tsp
herbs: fresh or dried, minced 1 tsp
olive oil 1 tsp

Directions:

  1. Heat up the water to just below a boil.
  2. Mix dry ingredients together in a bowl. (Optional: mix in olive oil, garlic powder, cumin, herbs.)
  3. Stir in hot water. As you mix it all together the dough will start to ball up.
  4. Let dough rest for a few minutes.
  5. Form 7 small balls of dough. Roll out each ball between 2 pieces of parchment paper or saran wrap.
  6. You can bake them on a baking sheet for 14 to 20 minutes at 350°F. (The thinner they are the faster they cook.) Or, you can cook them in a lightly oiled sauté pan or skillet for a few minutes on each side.
  7. These go great with tzatziki sauce and Greek-style salad.
