One-Pot Zuppa Toscana Soup (dairy-free)
This starch-free and dairy-free Zuppa Toscana Soup is a delicious and nourishing one-pot meal. I love to make a double batch to freeze the extras in individual portions. It’s one of my go-to recipes when the snowflakes start to fall! The radishes may seem like an odd addition, but they are a perfect replacement for starchy potatoes, which traditional recipes call for. The radishes become milder as they cook but hold their shape well. Check out this gut-healing chicken meat stock recipe for an awesome soup base!

radishes, quartered | 1 cup
mushrooms, diced | 1 cup | |
chicken stock | 4 cups | |
kale (stems removed and chopped) | ½ bunch
coconut milk, full fat and unsweetened | 1 can (13.5-ounce)

Homemade Italian Sausage
ground pork (or beef) | 1 lb
red wine vinegar | 1 tbsp | |
parsley, dried | 2 tsp | |
salt | 1 tsp | |
garlic powder | 1 tsp | |

red pepper flakes | 1 tsp | |
oregano, dried | ¼ tsp | |
thyme, dried | ¼ tsp | |
(optional) fennel seed, ground | ¼ tsp tsp |
Directions:
- If you’re home-making Italian sausage: put all the Italian Sausage ingredients in a bowl and mix well.
- Brown the Italian sausage in a large heavy-bottomed pot over medium heat. Make sure to break up the larger pieces. Cook through, drain, and set aside.
- Cook the bacon pieces in the same pot over medium heat until crisp. Remove the bacon and set it aside.
- Use the bacon fat to saute the onions and garlic. Cook until the onion is translucent, about 5 minutes.
- Add chicken broth to the pot and bring to a boil over high heat. Add the chopped mushrooms and radishes and boil until the radishes are tender, about 10-15 minutes.
- Reduce heat and gently stir in the coconut milk, cooked sausage. Heat through.
- Add the bacon and kale to the soup just before serving and cook until the kale has softened.
- Season to taste and enjoy!
