Kick AS Green Soup

This Kick AS Green Soup is about as basic, flexible, and nutrient-rich as it gets. It also freezes beautifully! The key to this recipe is to get the meat nice and crispy (I’m not saying burnt, but definitely make sure there’s a nice crisp to it!). And then just dress it up as fancy as you’d like. I promise you’ll inspire those around you to follow in your footsteps! If you want an extra-fancy but quick lunch, add my High Protein Hemp Bread on the side.
Ingredients
ground beef (or another ground meat of choice) | ½ lb | |
broccoli florets, chopped | 3 cups | |
parsley, fresh | ½ cup | |
(bone) broth/meat stock | 2 cups | |
sea salt | 2 pinches | |
olive oil | drizzle |
Optional Garnishes:
radishes, sliced | ¼ cup | |
lemon, wedged | ¼ | |
parsley, fresh, chopped | 2 tbsp | |
bacon, crumbled | 2 tbsp |
Directions:
- Fry ground beef until it is crispy and crumbly.
- Steam broccoli and chopped celery until fork-tender.
- Toss steamed broccoli and celery in a high-speed blender along with broth and fresh parsley. Blend until smooth.
- Serve Kick AS Green Soup with fried meat on top, season with salt, and drizzle with oil.
- Garnish is optional but essential if you want to make others jealous of what you’re eating!
Recipe/Dietary Notes:
- Starch-Free: omit the black pepper.
- Vegan option: omit beef, sub veggie broth for bone broth.
