One-Pot Zuppa Toscana Soup (dairy-free)

This starch-free and dairy-free Zuppa Toscana Soup is a delicious and nourishing one-pot meal. I love to make a double batch to freeze the extras in individual portions. It’s one of my go-to recipes when the snowflakes start to fall! The radishes may seem like an odd addition, but they are a perfect replacement for starchy potatoes, which traditional recipes call for. The radishes become milder as they cook but hold their shape well. Check out this gut-healing chicken meat stock recipe for an awesome soup base!

Ingredients

Italian sausage (storebought or from recipe below) 1 lb
bacon 6 slices
yellow onion, diced 1
garlic 2 tbsp
radishes, quartered 1 cup
mushrooms, diced 1 cup
chicken stock 4 cups
kale (stems removed and chopped) ½ bunch
coconut milk, full fat and unsweetened 1 can (13.5-ounce)
salt (and pepper, if you tolerate low-starch) to taste

Homemade Italian Sausage

ground pork (or beef) 1 lb
red wine vinegar 1 tbsp
parsley, dried 2 tsp
salt 1 tsp
garlic powder 1 tsp
onion powder 1 tsp
basil, dried 1 tsp
paprika 1 tsp
red pepper flakes 1 tsp
oregano, dried ¼ tsp
thyme, dried ¼ tsp
(optional) fennel seed, ground ¼ tsp tsp

Directions:

  1. If you’re home-making Italian sausage: put all the Italian Sausage ingredients in a bowl and mix well.
  2. Brown the Italian sausage in a large heavy-bottomed pot over medium heat. Make sure to break up the larger pieces. Cook through, drain, and set aside.
  3. Cook the bacon pieces in the same pot over medium heat until crisp. Remove the bacon and set it aside.
  4. Use the bacon fat to saute the onions and garlic. Cook until the onion is translucent, about 5 minutes.
  5. Add chicken broth to the pot and bring to a boil over high heat. Add the chopped mushrooms and radishes and boil until the radishes are tender, about 10-15 minutes.
  6. Reduce heat and gently stir in the coconut milk, cooked sausage. Heat through.
  7. Add the bacon and kale to the soup just before serving and cook until the kale has softened.
  8. Season to taste and enjoy!
