Starch-Free Low-Carb French Fries
These flavorful veggie-based Starch-Free Low-Carb French Fries make a great side dish or snack. I find golden beets to have a more mellow and less earthy flavor than red beets, and golden beets and kohlrabi usually test starch free with iodine too! I also love using kohlrabi in this dish, as to me kohlrabi tastes a bit like “German starch-free potato.”
Ingredients
golden beets, large | 2 | |
kohlrabi large | 2 | |
olive oil | 3 tbsp | |
onion, dried, minced | 3 tbsp | |
garlic powder | 2 tsp | |
sea salt | to taste | |
fresh herbs (thyme, cilantro, parsley, green onion), optional | 2 tbsp |
Directions:
- Preheat the oven to 450°F.
- Peel veggies, then slice into long strips to make “shoestring” French fries.
- Toss veggies in oil, then toss in the dried onion, garlic, and sea salt.
- Bake for 25 minutes at 450°F, check on them at 15 minutes and flip them.
- After baking for 25 minutes, broil them under high for a few more minutes to add more golden color.
- Garnish Starch-Free Low-Carb French Fries with fresh thyme and green onions. Serve with a side of my plum ketchup, cranberry ketchup, huckleberry BBQ sauce, ranch dip, or honey mustard.
