Starch-Free Low-Carb French Fries

These flavorful veggie-based Starch-Free Low-Carb French Fries make a great side dish or snack. I find golden beets to have a more mellow and less earthy flavor than red beets, and golden beets and kohlrabi usually test starch free with iodine too! I also love using kohlrabi in this dish, as to me kohlrabi tastes a bit like “German starch-free potato.”

Ingredients

golden beets, large 2
kohlrabi large 2
olive oil 3 tbsp
onion, dried, minced 3 tbsp
garlic powder 2 tsp
sea salt to taste
fresh herbs (thyme, cilantro, parsley, green onion), optional 2 tbsp

Directions:

  1. Preheat the oven to 450°F.
  2. Peel veggies, then slice into long strips to make “shoestring” French fries.
  3. Toss veggies in oil, then toss in the dried onion, garlic, and sea salt.
  4. Bake for 25 minutes at 450°F, check on them at 15 minutes and flip them.
  5. After baking for 25 minutes, broil them under high for a few more minutes to add more golden color.
  6. Garnish Starch-Free Low-Carb French Fries with fresh thyme and green onions. Serve with a side of my plum ketchup, cranberry ketchup, huckleberry BBQ sauce, ranch dip, or honey mustard.

    Ooooo, gonna have to share this with my husband. He *loves* to bring out our mandolin slicer for Julienning veggies. And he’s a huge fan of beets!
