Crispy Almond and Sesame Crackers (only 5 ingredients)

I love the versatility of these crispy almonds and sesame crackers that cater to many restricted diets. When I’m feeling fancy I’ll top these with some homemade avocado mayo, smoked cheese or smoked salmon, and a slice of cucumber. But, these crackers are also sturdy enough for a dip (that is if you don’t gobble them up plain first).

This cracker is a go-to in my recipe repertoire. Feel free to use this as a base recipe and experiment with adding your favorite savory herbs or sweet seasonings (see recipe notes).

Ingredients

almond flour 1 cup
sesame seeds (black or white) ¼ cup
baking soda ¼ tsp
sea salt ¼ tsp (+ some for sprinkling)
egg, beaten 1 large

Directions:

  1. Preheat oven to 350°F and ensure the rack is in the middle position.
  2. Cut 2 pieces of parchment paper to fit a large cookie sheet. Spray 1 side of each piece of parchment paper with cooking spray and set the sheets aside.
  3. Mix all dry ingredients together in a medium bowl. Add the egg to the dry mixture and incorporate well.
  4. Lay half the dough in the center of a prepared piece of parchment paper. Roll dough into a large rectangle, approximately 2mm thick.
  5. Remove the top piece of parchment paper. Use a large knife or pizza cutter to cut crackers into desired shapes and sizes.
  6. Lightly season the dough with a sprinkle of salt.
  7. Gently, slide the piece of parchment paper onto a cookie sheet.
  8. Bake the crackers in the center of the oven until they are slightly golden, approximately 18-20 minutes depending on your oven.
  9. Gently slide the parchment paper with crackers onto a cooling rack.
  10. Repeat with the other half of the dough.
  11. Store in an airtight container.

Recipe Notes:

The sky is the limit with this recipe as it allows for many creative substitutions and additions. For example, I have successfully substituted sesame seeds for flax and chia seeds. I’ve added random combinations: dried rosemary, garlic powder, onion powder, dried chives, lemon pepper, smoked paprika, Everything Bagel seasoning, ranch seasoning, cinnamon, and coconut sugar, etc.
