Yellow Curry with Chicken and Veggies
This is a very simple starch-free approach to curry, and I think it is fabulous! I have played around with many different variations of this dish and I am currently in love with the simplicity and balance of the flavors below. Feel free to add in more spices if you’d like, including star anise, cinnamon stick, fennel seeds, starch-free ginger concentrate, and coriander. In the beginning, this recipe included all of those additional spices, but now I love how the flavors below play together. *I use a little pinch of starch-free curcumin from one of my curcumin supplements to add a pop of yellow color to this dish. But you are welcome to use turmeric powder (starchy) instead.
Ingredients

kaffir lime leaves | 2 | |
cumin, ground | ½ tsp | |
onion, diced | ¼ cup | |
garlic, minced | 1 clove | |
chicken breast, diced | ½ lb | |
lime juice | 2 tsp | |
coconut milk (or other non-dairy milk) | 1 cup | |
curcumin (or turmeric, starchy) | 1 pinch | |
broccoli | 2 cups | |
sea salt | to taste | |
black pepper (optional, starchy) | to taste | |
veggies of choice: sliced peppers (*see recipe notes), zucchini, cauliflower, etc. | 3 cups |
Optional garnish
cilantro, fresh, chopped | 1 tbsp | |
Thai basil, fresh, chopped | 1 tbsp | |
fresh lime wedges | 2 |
Directions:
- Heat oil in a sauté pan over medium heat.
- Mash up the curry leaves and kefir lime leaves using your hands, and then add the leaves to hot oil. Let the leaves cook for a couple minutes which will release their fragrance.
- Add in cumin, onion, garlic, and chicken. Cook ingredients while stirring around every so often, until chicken is lightly cooked on the edges; add in lime juice to deglaze the pan.
- Add in coconut milk and a pinch of curcumin.
- After the chicken is fully cooked, about 7 more minutes, add in broccoli florets and optional veggies of choice. Cook until veggies soften. Add a little more coconut milk if needed.
- Remove the leaves.
- Serve as is, or with roasted cauliflower rice. Use optional garnishes.
Recipe Notes:
- Some people react to nightshades. Peppers are a nightshade and are optional in this recipe.
