Quick Pickled Red Onions

This simple Quick Pickled Red Onions recipe is a fabulous way to stretch the life of a red onion. Typically, once you cut an onion you need to use the remaining part within a few days. But, with this super simple recipe, you can make that one onion last a few weeks. These pickled onions are tangy and slightly sweet, adding a beautiful bright pink color and kick of flavor to a variety of dishes, including salads, tacos, pulled pork, and many more!

Ingredients

red onion, thinly sliced 1 medium
vinegar (white wine or apple cider) 1+ cup
honey (or other sweetener) 1 tbsp
sea salt 1 tsp

Directions:

  1. Mix vinegar, sweetener, and salt well in a mason jar.
  2. Thinly slice red onions and add to the vinegar solution. Make sure the onion is well covered and, if needed, add in more vinegar.
  3. Let the onions marinate in the vinegar for at least one hour before serving. These pickled onions taste best when left to sit in the fridge for 2 days or more.
  4. These quick pickled red onions are stored in the refrigerator and will keep for 3 to 4 weeks.
