Smoked Salmon Scramble with Spinach & Truffle Oil

The added truffle oil in this scramble replaces the need for any cheese and adds that magical umami flavor. I absolutely love a little truffle oil (or truffle salt) with my eggs. Just remember, a little truffle oil goes a long way!

Ingredients

eggs 3
spinach 1 handful
smoked salmon, chopped 2 oz
green onions, chopped 2
truffle sea salt (or a tiny amount of white truffle oil) pinch
oil for frying
avocado, sliced (optional) ½

Directions:

  1. Whisk eggs in a small bowl.
  2. Heat up a small sauté pan over medium heat on the stovetop.
  3. Heat up a little oil in the pan.
  4. When the pan is nice and hot, toss in the spinach and stir around, causing the spinach to wilt.
  5. Add in small pieces of smoked salmon.
  6. Pour in eggs, letting them cook just a little, and then gently stir the scramble making sure it cooks evenly.
  7. To prevent overcooking the eggs, I take the pan off the heat just before the eggs are done setting up.
  8. Stir in green onions and a tiny drizzle of truffle oil.
  9. Top with sliced avocado.
