Simple Sautéed Red Cabbage (Low-Carb)
This simple sautéed red cabbage is a perfect winter side dish in my world! It’s easy, healthy, colorful, and delicious (and low-carb, to boot). I love this dish as-is, but depending on your mood you may choose to change it up by adding some thinly sliced onion, a bay leaf, star anise, mustard seeds or a handful of raisins. Really, the sky is the limit with this humble dish.
Ingredients
red cabbage, shredded | ½ head | |
olive oil | 2 tbsp | |
vinegar (balsamic or apple cider) | ¼ cup | |
monkfruit sweetener or honey (optional) | 1 tbsp | |
water | 2 tbsp |
Optional Variations
star anise | 1 | |
raisins (not low-carb) | ½ cup | |
mustard seeds | 1 tsp | |
bay leaf | 1 | |
onion (red or yellow) | 1 small | |
apple, diced (not low-carb) | 1 |
Directions
- Heat a skillet over medium-high heat.
- Add oil. (Note: If using optional onions, sautée them now, until translucent.)
- Add cabbage and sautée until wilted.
- Add remaining ingredients and stir.
- Reduce heat to low, cover with a lid, and cook for 20 minutes, stirring occasionally.
- Serve. Store leftovers in the fridge.
