Simple Sautéed Red Cabbage (Low-Carb)

This simple sautéed red cabbage is a perfect winter side dish in my world! It’s easy, healthy, colorful, and delicious (and low-carb, to boot). I love this dish as-is, but depending on your mood you may choose to change it up by adding some thinly sliced onion, a bay leaf, star anise, mustard seeds or a handful of raisins. Really, the sky is the limit with this humble dish.

Ingredients

red cabbage, shredded ½ head
olive oil 2 tbsp
vinegar (balsamic or apple cider) ¼ cup
monkfruit sweetener or honey (optional) 1 tbsp
water 2 tbsp

Optional Variations

star anise 1
raisins (not low-carb) ½ cup
mustard seeds 1 tsp
bay leaf 1
onion (red or yellow) 1 small
apple, diced (not low-carb) 1

Directions

  1. Heat a skillet over medium-high heat.
  2. Add oil. (Note: If using optional onions, sautée them now, until translucent.)
  3. Add cabbage and sautée until wilted.
  4. Add remaining ingredients and stir.
  5. Reduce heat to low, cover with a lid, and cook for 20 minutes, stirring occasionally.
  6. Serve. Store leftovers in the fridge.

  • Optional variation ingredients (as listed) may be added to this recipe. Please note that these ingredients should be added individually, not together.
