Roasted Honey Dijon Pecans

I love how easy it is to make a batch of these roasted honey dijon pecans. Even more so, I love how delicious (and addicting!) they are! The hint of honey and dijon mustard is a fun twist on roasted pecans. I like to add a bowl of these on lunch smorgasbords for my family and also try to have some available for quick on-the-go snacks.

Ingredients

pecans, raw 5 cups
honey 3 tbsp
dijon mustard 3 tbsp
avocado oil* (see recipe notes) 2 tbsp
sea salt ½ tsp

Directions:

  1. Preheat oven to 300°F.
  2. Line a baking sheet with parchment paper.
  3. Mix honey, avocado oil, and dijon mustard together in a large bowl.
  4. Add pecans and mix until thoroughly coated.
  5. Spread pecans on a prepared baking sheet in a single layer.
  6. Bake in preheated oven for 22-25 minutes. Ovens may vary in bake times, but remove these from the oven when they are starting to brown just slightly.
  7. Let pecans cool before enjoying them.
  8. Store pecans in an airtight container (my personal preference is to store these in the fridge) and try to eat them within a month (if you can make them last that long).

Recipe Notes:

  • Olive oil or coconut oil can be used instead of avocado oil.
