Honey Caramel Candy Apples

These Honey Caramel Candy Apples are a fantastic Fall treat! My kids love to help me make these using fresh apples from our neighbor’s apple tree. Optional toppings for decorating these can include crushed nuts, toasted coconut, or chocolate shavings (and, of course, sprinkles for kids!).

Ingredients

small apples (I prefer honey crisp) 8
popsicle sticks 8
honey 1 cup
coconut cream (thick cream from top of a can of chilled coconut milk) 1 cup
sea salt pinch
vanilla (optional) 1 tsp
crushed nuts, toasted coconut, or chocolate shavings (optional toppings) 1 cup

Directions

  1. Wash and dry the apples. Insert popsicle sticks in the bottom of each apple. Set dry apples on a baking sheet lined with parchment paper.
  2. In a clean, dry, heavy-bottomed saucepan, heat up honey, coconut cream, and sea salt over medium heat for 15 minutes.
  3. Keep a close eye on it, stirring occasionally, to prevent the mixture from sticking to the bottom.
  4. After simmering for 15 minutes, (add in vanilla) and slowly turn up the heat a little at a time to get the caramel up to 250°F. Use a candy thermometer to measure temperature.
  5. When the caramel hits 250°F, immediately remove it from the heat.
  6. Carefully dip and swirl each apple in the caramel, and use a spoon to help spread it out evenly. I like to coat 1/2 of the apple, as that is just the right amount of caramel per serving. If the caramel starts to firm, you can microwave it for 30 seconds to warm it back up.
  7. Let caramel apples sit for about an hour, then roll them in crushed nuts. Dipping the bottom of each apple in crushed nuts helps prevent these apples from sticking to the parchment paper.
  8. Store in the fridge on a sheet of parchment paper

Recipe Notes

  • Starch-Free version: Some apples can be starchy, depending on the type and time of picking. To be safe, test with iodine.
  • AIP version: You can use finely chopped tiger nuts and toasted shredded coconut.
