Easy Peasy Paleo Granola

The toasted crunch of this Easy Peasy Paleo Granola is fantastic. I love this granola as a snack but you can also fill a bowl for breakfast and enjoy it with a milk of choice (my favorite is almond milk).

Recipe & Diet Notes:

• Chia and flax seeds are NOT recommended for this recipe.
SCD + GAPS: use nuts and honey, and only allowed seeds.
Low Carb: coconut oil + Lakanto (monk fruit + erythritol) works, just reduce the amount of time the two ingredients simmer together.
Vegan + dairy-free: use coconut oil instead of the butter

Ingredients

mixed nuts and seeds of choice: slivered almonds, walnuts, hazelnuts, macademia nuts, pecans, cashews -starchy, pumpkin seeds, sunflower seeds, sprouted watermelon seeds, hemp seeds, sesame seeds, (*see note) 2 cups
dried fruit of choice: cherries, figs. dates, raisins, blueberries, etc., chopped ½ cup
butter, (or 3 tbsp coconut oil) ¼ cup
maple syrup (or honey, or *see low carb note) ¼ cup
sea salt 2 pinches

Directions:

  1. Line a baking tray with parchment paper.
  2. Measure out 2 cups of the recommended nuts & seeds and set aside ½ cup of dried fruit of choice separately. Chop any large nuts or dried fruit into smaller pieces if you’d like.
  3. Heat a saute pan over medium heat. When hot, gently toast nuts and seeds. Make sure to stir often to prevent burning. You just want to warm up the nuts & seeds so they are warm/hot to the touch. Then, pour warm nuts & seeds out onto parchment paper.
  4. Put butter (oil) and maple syrup (Lakanto) in to saute pan, stirring constantly over medium heat to form a caramel mixture. Heat until the mixture is bubbling and starts to thicken.
  5. Incorporate nuts & seeds back in and stir really well.
  6. Add in dried fruit, then mix well and remove from heat.
  7. Spoon granola mixture onto parchment paper-lined tray.
  8. Finally, sprinkle with a little sea salt. Let the mixture cool for 20 minutes. You can put this granola in the fridge to speed up the cooling time.
  9. Store in an airtight container for up to 1 week on the counter, or up to 3 weeks in the fridge.
