Quick Pickled Red Onions
This simple Quick Pickled Red Onions recipe is a fabulous way to stretch the life of a red onion. Typically, once you cut an onion you need to use the remaining part within a few days. But, with this super simple recipe, you can make that one onion last a few weeks. These pickled onions are tangy and slightly sweet, adding a beautiful bright pink color and kick of flavor to a variety of dishes, including salads, tacos, pulled pork, and many more!
Ingredients
| red onion, thinly sliced | 1 medium | |
| vinegar (white wine or apple cider) | 1+ cup | |
| honey (or other sweetener) | 1 tbsp | |
| sea salt | 1 tsp |
Directions:
- Mix vinegar, sweetener, and salt well in a mason jar.
- Thinly slice red onions and add to the vinegar solution. Make sure the onion is well covered and, if needed, add in more vinegar.
- Let the onions marinate in the vinegar for at least one hour before serving. These pickled onions taste best when left to sit in the fridge for 2 days or more.
- These quick pickled red onions are stored in the refrigerator and will keep for 3 to 4 weeks.
