Chilled Cucumber Gazpacho

I love the way this vibrant and refreshing soup energizes me and resets my day. This soup is an alkalizing powerhouse. This is the perfect soup to enjoy during a detox diet or on a hot summer day!

Ingredients

cucumbers 2
avocado ½
water ½ cup
olive oil 1 tbsp
lime juice 1 tbsp
basil 1 handful
sea salt pinch
(optional) fresh herbs - dill, parsley, mint to taste
(optional) celery stalks - replaces need for salt 2
(optional) microgreen for garnish ¼ cup
(optional nightshade) jalapeno ½

Directions:

  1. Chop veggies and herbs (not microgreens).
  2. Blend soup ingredients in a high-speed blender.
  3. Chill for a couple of hours, or eat right away.
  4. Garnish with your choice of hemp seeds, cold pressed oil, fresh chopped herbs, microgreens, sea salt, and pepper.
