Chilled Cucumber Gazpacho
I love the way this vibrant and refreshing soup energizes me and resets my day. This soup is an alkalizing powerhouse. This is the perfect soup to enjoy during a detox diet or on a hot summer day!
Ingredients
| cucumbers | 2 | |
| avocado | ½ | |
| water | ½ cup | |
| olive oil | 1 tbsp | |
| lime juice | 1 tbsp | |
| basil | 1 handful | |
| sea salt | pinch | |
| (optional) fresh herbs - dill, parsley, mint | to taste | |
| (optional) celery stalks - replaces need for salt | 2 | |
| (optional) microgreen for garnish | ¼ cup | |
| (optional nightshade) jalapeno | ½ |
Directions:
- Chop veggies and herbs (not microgreens).
- Blend soup ingredients in a high-speed blender.
- Chill for a couple of hours, or eat right away.
- Garnish with your choice of hemp seeds, cold pressed oil, fresh chopped herbs, microgreens, sea salt, and pepper.
