One-Pot Starch-Free Chili (large batch)
Comfort food at its finest (especially on chilly winter days)!
When I make this one-pot starch-free chili, I always make a large batch. Either I freeze leftovers in meal-sized portions or I throw in beans for the rest of the family to enjoy the chili alongside me. As posted, the recipe is large – you could adjust the amount to your preference, but I promise you’ll be making it again soon.
My favorite way to eat this chili is over a bed of lettuce and then I dress it up with whatever I have available: ripe avocado, fresh cherry tomatoes, shredded smoked cheese, etc. Don’t be put off by the odd ingredients – I promise it all works together.
One final note: This recipe tastes even better the next day as it allows the flavors to meld together beautifully!
Ingredients
| ground beef | 3 lb | |
| mushrooms, chopped (white or baby bella) | 3 cups | |
| yellow onion, chopped | 2 cups | |
| celery, chopped | 2 cups | |
| radishes, chopped | 2 cups | |
| bell peppers, chopped | 2 cups | |
| garlic, minced | 1 tbsp | |
| chili powder (*see recipe notes) | ½ cup | |
| tomato sauce | 3 (15oz) cans | |
| tomato paste | 1 (6oz) can | |
| beef broth or water | 1 cup | |
| cacao powder | 2 tsp | |
| apple cider vinegar | 1 tbsp | |
| fish sauce | 1 tbsp | |
| coconut aminos | 1 tbsp | |
| honey (or maple syrup) | 2 tbsp | |
| sea salt | to taste |
Directions:
- Saute chopped onions in olive oil in a large pot (one that will hold all ingredients).
- Add ground beef and cook until browned.
- Add chopped mushrooms, celery, radishes, bell peppers, garlic, and chili powder. Mix and cook for 5 minutes.
- Add all remaining and simmer, covered for 30 minutes.
- Serve hot with your favorite garnishes.
- Note: This recipe tastes even better the next day. Once cooled to room temperature, store in the fridge or split into meal-sized portions and freeze.
