Instant Berry Cobbler

This versatile instant berry cobbler is one of my favorite quick snack ideas. When I get home after a long day and need a quick snack to help re-energize I either blend up a smoothie or make this simple instant berry cobbler. This dish also makes a fabulous dessert to serve to dinner guests. You can also top this with a dollop of my whipped coconut cream or a scoop of vanilla ice cream.
Ingredients
your choice of nuts/seeds, chopped | 2 tbsp | |
coconut oil | 1 tsp | |
sea salt | 1 pinch | |
berries or cherries, fresh or frozen | 1 cup | |
honey, optional | 1 tbsp | |
whipped coconut cream, optional | 1 tbsp |
Directions:
- Heat a small saucepan over medium-low heat.
- Add in the coconut oil and nuts/seeds. Lightly toast the nuts, and add a pinch of sea salt.
- Remove nuts/seeds from the pan.
- Add frozen berries or cherries (and honey, if using) into a saucepan, and stir until the berries are defrosted and warmed. (If using fresh berries, you don’t have to heat them up if you don’t want to).
- Spoon warm berries into a serving bowl.
- Top with toasted nuts and a dollop of whipped coconut cream or vanilla ice cream.
