Smoked Salmon Scramble with Spinach & Truffle Oil
The added truffle oil in this scramble replaces the need for any cheese and adds that magical umami flavor. I absolutely love a little truffle oil (or truffle salt) with my eggs. Just remember, a little truffle oil goes a long way!
Ingredients
eggs | 3 | |
spinach | 1 handful | |
smoked salmon, chopped | 2 oz | |
green onions, chopped | 2 | |
truffle sea salt (or a tiny amount of white truffle oil) | pinch | |
oil | for frying | |
avocado, sliced (optional) | ½ |
Directions:
- Whisk eggs in a small bowl.
- Heat up a small sauté pan over medium heat on the stovetop.
- Heat up a little oil in the pan.
- When the pan is nice and hot, toss in the spinach and stir around, causing the spinach to wilt.
- Add in small pieces of smoked salmon.
- Pour in eggs, letting them cook just a little, and then gently stir the scramble making sure it cooks evenly.
- To prevent overcooking the eggs, I take the pan off the heat just before the eggs are done setting up.
- Stir in green onions and a tiny drizzle of truffle oil.
- Top with sliced avocado.
