Strawberry Poppy Seed Spinach Salad
This is a classic! It’s both a lovely summer and winter salad. In winter I tend to replace the fresh strawberries with dried cherries and it’s terrific all over again!
Salad Ingredients
| baby spinach | 8 cups | |
| strawberries, fresh | 1 pint | |
| avocado | 1 small | |
| red onion | ½ | |
| almonds, sliced | ¼ cup | |
| chicken, grilled (optional) | 1 cup |
Poppy Seed Dressing
| white balsamic vinegar* | 4 tbsp | |
| olive oil | 4 tbsp | |
| mustard | 1 tsp | |
| poppy seeds | 1 tbsp | |
| honey, raw (or coconut nectar) | 1 tsp | |
| sea salt | 1 pinch |
Directions:
INSTRUCTIONS
- Whisk poppy seed dressing together in a small jar.
- Slice strawberries thin, chop the avocado, and slice the red onion.
- In a large salad bowl, toss spinach, strawberries, avocado, and red onion in poppy seed dressing.
- Top with sliced almonds.
- Serve and enjoy!
Recipe Notes:
- Feel free to use any colored balsamic vinegar if white balsamic isn’t available, or sub in your favorite vinegar, red wine vinegar can also be used.
- SCD + GAPS: use allowed vinegar, use honey.
- Vegan: use coconut nectar.
- AIP: omit almonds/mustard/poppy seeds
